40 lbs. ground meat, 25% fat
8 level teaspoons cure #1
1 cup canning/pickling salt
1/2 cup mustard seed
6 TBSP ground black pepper
6 TBSP ground cayenne pepper
4 tsp garlic powder
2 TBSP herbes de Provence, ground to powder
